Jen’s Protein Pancakes

Ingredients

  • Coconut Flour – 15 grams
  • Protein Powder or PB2 – 30 grams
  • Egg  – 1
  • Baking Powder – ¼ t. 
  • Almond Milk – ½ cup
  • Sugar Free Pudding mix – 8 grams
  • Dairy Free Yogurt – any flavor – 1 container

Preparation

  1. Mix coconut flour, protein powder, egg, baking powder, and almond milk with whisk. 
  2. Cook on non stick skillet or spray with cooking spray.  
  3. Mix Sugar Free Instant pudding mix (any flavor) with Yogurt (any flavor) until blended.
  4. Layer pancake with pudding mixture.  
  5. Optional: add strawberries/fruit,  sugar free syrup etc. s.
